Started her PhD in Biotechnology on 2021. Over the next years, her research will focus on the determination of nutritional resilience and sustainable diets bringing special attention towards underutilized crops and legumes such as faba beans and lupins. She holds a master in Technology, Nutrition and Food Science, UM France (2018); a master in Sustainable management of food quality, CIHEAM Spain (2018) and a bachelor degree in Nutrition, URL Guatemala (2015). Her work at UCP dates back to 2016 when she started developing food products employing legumes. This led to the development of a legume based drink that was awarded on 2020 by the "New Food/Food Valorisation Contest".
