Summary
Glucans are polysaccharides commonly found in different organisms such as mushrooms, yeasts, oats, barley and seaweed but not in mammalians. In this class, glucans act as immune stimulants being recognized by different pathogen-associated molecular pattern receptors. This property is interesting for the development of applications where the immune system activation is needed, for example, in viral infections. In this work, we have explored the use of industrial spent yeast residue to extract and purify glucans with suitable properties for the development of different biomedical applications.
