The seminar will address microbiological, enzymatic, nutritional, functional and sensory aspects related to the processing of fruit products, namely tropical, by high hydrostatic pressure. It also addresses trends and new potentials of the process application.

 

Curriculum vitae

Food Engineer from the University of Campinas, with a Master's degree from Unicamp and PhD from the University of Reading, UK. Senior Researcher at Embrapa Agroindústria de Alimentos, Rio de Janeiro, where he served as Director. He was based at Agrosup Dijon, France, between 2009 and 2011, by the Embrapa Labex Program. Chair of the Bioprocess Section of the International Commission of Agricultural Engineering, representative of Brazil at Iseki and ambassador of the Global Harmonization Initiative. Member of the Editorial Board of Food Engineering Reviews, associate editor of Post Harvest Technology and Innovation.
